Tiki drinks come in all shapes and sizes. They’re easy to spot when they’re served in tiki mugs with elaborate, flaming garnishes, but there are more than a few stealth tiki drinks out there that will surprise you when you take a sip. The Sailor’s Delight falls into this category, since this bright pink cocktail – served in a (vintage) martini glass – certainly doesn’t look like your average tiki drink at first.

The cocktail is really bright, thanks to a blend of fresh lemon and lime juices, and has a subtle spice from our spiced syrup and Domain de Canton ginger liqueur. Raspberries give it some extra sweetness, and infuse the drink with a gorgeous pink color, while orgeat softens the berries with its creamy almond flavor. Even though there is a lot of flavor in here, the rum still comes through in every sip. We used Scarlet Ibis, a fabulous and full-bodied mixing rum that brings a complex set of flavors  into this cocktail, reaffirming its place as a tiki drink even if you’re still having your doubts after getting all the other ingredients together. If you don’t have any on hand, give it a try with a sweeter rum like Zaya or a mellower rum, like Appleton Estate X/V, that will enrich the fruity flavors of this drink without overpowering them.

Sailor’s Delight
2 fresh raspberries*
1 1/2 oz Scarlet Ibis Rum
3/4 oz lime juice
1/4 oz lemon juice
1/2 oz spiced syrup
1/4 oz orgeat
1/4 oz Domain de Canton

Muddle raspberries in the bottom of a mixing glass. Add in all remaining ingredients, fill with ice and shake vigorously.
Double strain into a a martini glass and garnish with fresh raspberries.

Serves 1.

 

*Although we used fresh berries, you can easily make this drink with frozen and defrosted raspberries, too.
